Banana PB Protein Muffins

I’m not usually a big baker, but this season of life is calling for a little extra comfort food 😅 Can anyone else relate?

Of course comfort food doesn’t have to be unhealthy! These muffins are gluten free, dairy-free, refined sugar free, and packed with protein! I used @skipwithorganics Beauty Protein, which is made from bioavailable organic plant protein and contains prebiotic fiber + probiotics, antioxidants, and collagen support!

– 1.5 cups mashed banana
– 2 tbsp honey
– 1.5 tsp vanilla
– 3 eggs
– 1.5 cups almond flour
– 1/2 cup protein powder (I used @skipwithorganics)
– 1 tsp baking soda
– 1 tsp baking powder
– 1/4 tsp salt
– 1 tsp cinnamon
– 1/4 cup peanut butter

Mash your banana with a fork and add eggs, vanilla, and honey, whisking to combine. Gently stir in your flour, protein powder, baking powder and soda, cinnamon, and salt, being careful not to over mix. Fold in your peanut butter. Scoop into 12 muffin tins and bake at 350 for 22 minutes. Allow to cool before devouring 🍌🥜🍯🧁💪🏼✨I recommend drizzling with honey and more PB!
