Preheat the oven to 400°F. Lightly brush or spray a 9x13-inch baking dish with avocado oil or olive oil.
Add all the ingredients (chicken, shallots, garlic, white wine, orzo, chicken broth, artichoke, spinach, tomatoes, thyme, salt, pepper, and lemon juice) except for the cream cheese to the casserole dish. Mix until well combined.
Press into an even layer, making sure most of the orzo is submerged in liquid to ensure even cooking. Add the cream cheese on top.
Cover with a lid or foil and bake for 45 minutes. Remove lid/foil, stir the cream cheese into the mixture, and continue baking for another 15 to 20 minutes, or until the orzo is tender and the top is golden and bubbling.
Remove from the oven and allow to cool before serving. Enjoy!
Notes
If you’re really short on time, you can prepare this meal in the morning, cover it, and let it chill in the fridge until that evening. When you’re ready, simply pop it in the oven and bake before serving!
