Ingredients
4
pounds
white sweet potatoes,
peeled and cut into 2-inch cubes
⅔
cups
coconut cream
½
cup
unsweetened almond milk
Salt and pepper to taste
Instructions
Add the cubed potatoes to a large pot and cover with about 1 inch of water.
Add 1 teaspoon of salt to the water and bring to a boil.
Reduce the heat and simmer, uncovered, until the potatoes are fork-tender (this took about 13 minutes for me, but check your potatoes fairly often).
Drain the water from the potatoes and mash them in the same pot using your preferred method.
Add in the coconut cream and almond milk and generously season with salt and pepper.
Mix again and taste, adding more salt as needed. Serve and enjoy!
