Chicken spiedie sandwiches are a casual meal that both adults and kids will fall in love with! Serve with a mound of caramelized onions on a roll or by itself right off the skewer for an easy, handheld dinner.
Add the chicken to an airtight container or sealable plastic bag along with the sliced onions and smashed garlic.
Whisk together the marinade ingredients (avocado oil, lemon, red wine vinegar, onion powder, garlic powder, dried oregano, bay leaves, salt, and pepper) and pour over the chicken. Marinate overnight.
Soak the skewers in water for at least 20 minutes before cooking.
Heat a grill pan over medium-high heat.
Spray the pan with avocado or olive oil spray.
Add the skewers and cook on each side for 4 to 5 minutes.
Remove the skewers from the pan and reduce heat to medium.
Add the onions and cook for 10 to 12 minutes until nicely caramelized.
Serve the chicken skewers on your favorite gluten-free bun, top with caramelized onions, and enjoy!
Notes
If using an outdoor grill, heat to 450°F and cook for 4 minutes at a time, rotating three times.
