A single-serving breakfast that feels like dessert, these baked oats are delicious and nutritious thanks to the combo of oats, protein powder, and healthy fats.

Instructions
Preheat the oven to 350°F.
Grease a 12-ounce ramekin with avocado oil or coconut oil.
Add the rolled oats, almond milk, vanilla extract, cashew butter, baking powder, protein powder, and coconut sugar (if using) to a blender and blend until smooth.
Pour the batter into the prepared ramekin. Press the chocolate squares into the center, covering with the batter.
Top with chocolate chips.
Bake for 25 minutes.
Remove from the oven and allow to cool slightly before diving into the molten chocolate goodness.

You may think that turning your oven on for breakfast is a bit much, but I promise you, once you try baked oats you’ll be hooked. I like to prep the batter, pop it in the oven, and finish getting ready. Once I’m ready to take on the day, my oats are ready and waiting for me too! This recipe can be easily doubled (or tripled) for multiple people or days. Also, this recipe can be made ahead of time for busy weekday mornings. Simple reheat in the microwave and dive in.
