These Super Simple Shrimp Tostadas are a fun alternative to a traditional taco bar! Let your friends and family top their tostadas to their heart’s content for a festive, choose-your-own-adventure meal!
2tablespoonstaco seasoning(I used Siete Foods Mild Taco Seasoning)
12corn tostadas(see Notes below to make your own)
1canrefried beans(I used Siete Foods vegan refried pinto beans)
Guacamole(homemade or store-bought. See Notes for my guac recipe)
Salt to season
Chopped cilantro,for serving
Lime wedges,for serving
Sauce of choice(I used Siete Foods Creamy Jalapeño Botana Sauce)
Instructions
Toss the shrimp with 1 tablespoon of avocado oil and the taco seasoning.
Heat a pan over medium heat and add a drizzle of avocado oil.
Add the shrimp to the pan in a single layer and cook for 2 minutes on each side.
Remove the shrimp from the heat and let cool before slicing it into bite-sized pieces. Season with salt, if needed.
Heat the refried beans in a pan over low heat. Season with salt, if needed.
To assemble the tostadas, add a layer of beans, a layer of guacamole, and the shrimp.
Top with cilantro, a squeeze of lime, and your favorite taco sauce. Serve and enjoy!
Notes
How to make tostada shells: I like to make my own tostadas with corn tortillas. Brush the tortillas with avocado oil on both sides and bake them on a parchment-lined sheet pan at 400°F for 5 minutes on each side. Hit them with a little pinch of salt right out of the oven. They’ll come out hot and perfectly crispy — way better than any store-bought tostada! My quick homemade guac recipe: 2 large avocados mashed, juice of 1 lime, juice of ½ an orange (or another lime), 3 tablespoons diced red onion, ¼ cup chopped fresh cilantro, and sea salt to taste.
