Oven-roasted carrots are easy to put together and are always a welcome sight on a holiday table. Best enjoyed warm out of the oven, this side dish is truly unbeatable!
Add the carrots to a mixing bowl and drizzle with olive oil and honey. Season with salt and pepper. Toss until evenly coated and pour onto the baking sheet.
Roast 40 to 45 minutes, flipping halfway, until tender and caramelized.
Whisk tahini drizzle ingredients until smooth (if using).
Serve carrots warm, topped with sesame seeds and parsley, and a drizzle of tahini (optional) and more honey, enjoy!!a

While these are best served warm, you can prep them ahead of time. Clean and cut the carrots, and toss with the olive oil and honey. Place in the baking pan. Then an hour or so before dinnertime, pop them into the oven. If you make the tahini drizzle ahead of time, it will likely stiffen up as it sits. Add a bit more water and stir until you reach a desirable consistency.
