It’s not a holiday dinner without a roasted vegetable side. Every year, I make a new version of roasted carrots.
After making these Glazed Honey-Roasted Carrots with Tahini Drizzle, my husband Kyle said these were the best carrots I’ve made so far (cue the applause!).
These carrots have just the right amount of sweetness. The honey caramelizes in the oven, creating a sugary layer that brings out the natural flavors of the carrots themselves.


The savory tahini drizzle finish is optional, but it takes only a few ingredients and adds another dimension of flavor. I recommend giving it a try for that extra delicious bite.

This is one of those recipes where a few really good ingredients come together for a truly delicious bite. Buying good-quality olive oil, honey, and tahini will result in a crave-worthy bite.

- Carrots: Carrots tend to be a fan-favorite dish for adults and kids alike. Peel the carrots and cut them on a bias (diagonal) to make them extra pretty for the table.
- Olive Oil: Good quality olive oil is a must anytime of year, but especially during the holidays when you’re roasting pan after pan of winter vegetables.
- Honey: Honey is the perfect natural sweetener full of antioxidants. Use your favorite type, preferably a local, raw honey, because that variety promotes the most health benefits.

How to Make Honey Glazed Carrots with Tahini Drizzle
Start by preheating the oven to 400°F.
Add the carrots to a mixing bowl and drizzle with olive oil and honey. Season with salt and pepper. Toss until evenly coated and pour onto the baking sheet.


Roast 40 to 45 minutes, flipping halfway, until tender and caramelized.
Make the tahini drizzle by whisking together the tahini, lemon juice, honey, and water (as needed).
Serve carrots warm, topped with sesame seeds and parsley, and a drizzle of tahini (optional) and more honey, enjoy!!

Ingredients
Roasted Carrots:
- 2 pounds carrots, peeled and cut on the bias into 3-inch pieces
- 2 tablespoons olive oil
- 2 tablespoons honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon sesame seeds, for garnish
- 1 tablespoon chopped fresh parsley, for garnish
Tahini Drizzle:
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Water, as needed to thin
Instructions
- Preheat the oven to 400°F.
- Add the carrots to a mixing bowl and drizzle with olive oil and honey. Season with salt and pepper. Toss until evenly coated and pour onto the baking sheet.
- Roast 40 to 45 minutes, flipping halfway, until tender and caramelized.
- Whisk tahini drizzle ingredients until smooth (if using).
