½ cupcreamy peanut butter(I used Pics Peanut Butter)
⅓ cupmaple syrup
¼ cupcoconut oil,melted
1teaspoonvanilla extract
Instructions
Preheat the oven to 325°F.
In a large bowl, mix together the rolled oats, nuts, seeds, cinnamon, salt and set aside.
In a small bowl, whisk together the peanut butter, maple syrup, coconut oil, and vanilla until well combined.
Pour the wet mixture over the dry ingredients and gently stir until the dry ingredients are evenly coated.
Line a large sheet pan with parchment paper and spread the mixture into an even layer on the sheet pan.
Bake for 15 minutes. Stir and bake for another 7 to 10 minutes, watching the granola to ensure that it doesn’t burn.
Remove from the oven and place on a wire rack to allow the granola to cool completely.
Serve immediately or store in an airtight container for up to a month. Enjoy!

This recipe is completely customizable! Think of it as a template and add in extra mix-ins. Dried fruit, coconut shreds, additional nuts or seeds, even chocolate… The possibilities are endless!
