Maple Peanut Butter Granola

Granola is quick and easy to make from home and is full of simple, honest ingredients that you can modify to your liking! The below recipe is a great baseline to which you can add coconut, dried fruit, chocolate chips, and your favorite nuts and seeds! This sweet and savory recipe will become your staple breakfast, or if you’re like me, your go-to late night snack 😜
Ingredients:
3 cups old fashioned rolled oats
3/4 cup nuts and seeds (I chose walnuts, pecans, and pumpkin seeds)
1/2 cup Peanut Butter & Co. Smooth Operator peanut butter
1/3 cup maple syrup
1/4 cup coconut oil, melted
1 tsp vanilla
1 tsp cinnamon
1/2 tsp salt
Directions:
Preheat your oven to 325.
In a large bowl, mix together your dry ingredients and set aside.
In a small bowl, whisk together your peanut butter, maple syrup, coconut oil, and vanilla until well combined.
Pour the wet mixture over the dry ingredients and gently stir until the dry ingredients are evenly coated.
Line a large cookie sheet with parchment paper and spread your mixture into an even layer on the cookie sheet.
Bake for 15 minutes. Stir and bake for another 7-10 minutes, watching your granola to ensure that it doesn’t burn.
Remove from the oven and place on a wire rack to allow the granola to cool completely.
Serve immediately or store in an airtight container for up to a month.
