In a small jar, whisk together the honey, olive oil, spices, garlic salt and pepper.
Add the peeled and chopped carrots to a bowl and toss with your honey mixture.
Add the carrots to a parchment-lined sheet pan, pour any remaining honey mixture over the top, and roast in the oven for 25 minutes, tossing once halfway through.
Remove from oven and toss again.
Set your oven to broil and broil for 3-5 minutes, watching closely to ensure they don't burn.
Remove from oven, toss, top with fresh parsley (if using), serve, and ENJOY!
