Crispy Baked Buffalo Wings - Olivia Adriance

My husband Kyle is a wing guy. He used to make a variation of these chicken wings every Super Bowl Sunday when we lived in San Diego.

The wings would always get devoured so this recipe became his claim to fame. Fortunately, he’s letting me share his Crispy Baked Buffalo Chicken Wing recipe with you all. 

Unlike most restaurant versions, these wings are baked rather than fried.

My hack is to cook them on a wire rack so they crisp up on all sides in the oven. While they’re baking, you simply throw a few condiments together for a finger-licking, Buffalo-style sauce. 

These wings are easy, flavorful, and are bound to be a winning recipe with your game day crew too.

Serve them up on a large platter along with carrot sticks, celery, and a dairy-free ranch or blue cheese dressing. Yum! Let me know if they last until halftime…Enjoy! 

Key Ingredients for Crispy Baked Buffalo Chicken Wings

This epic game day app only requires a few ingredients. Here’s what you’ll need.

  • Chicken Wings: You’ll need about 4 pounds of bone-in wings for this recipe. If you have larger wings, that’s fine. You’ll just need to bake them for a bit longer. 
  • Spices: A quick spice mix of salt, baking powder, garlic powder, and pepper is used to season the wings. 
  • Hot Sauce: This is totally a matter of preference. I used @franksredhot original hot sauce. This is the base of the sauce, so choose one that you know you like.

  • Dairy-Free Butter: To keep this dairy-free, I used @miyokoscreamery plant-based butter. You could use regular butter as well. 
  • Lemon Juice: Adds some freshness and helps cut through the spicy sauce. 
  • Coconut Sugar: Just a tablespoon is all you’ll need for the perfect balance of spicy and sweet. 

How to Make Buffalo Chicken Wings

The game is about to start, so let’s get these wings going! Start by preheating your oven to 425°F. 

Pat the chicken wings dry (this helps them crisp up in the oven) and add them to a large bowl. Toss the wings with salt, baking powder, garlic powder, and pepper until evenly coated. 

Line two baking sheets with parchment paper. Place a wire rack over the top and add the wings directly to the rack. If you don’t have a rack, place the wings directly on the parchment paper. 

Recipe Tip

If you have baking sheets with wire racks, I suggest you use those. Cooking the wings on a rack helps them crisp up on all sides as they bake. 

Bake the wings for about 1 hour until golden brown. For larger wings, you may need to cook them longer (about 75 minutes total). 

While the wings are baking, go ahead and make the sauce.

Add the buffalo sauce, butter, lemon juice, Italian seasoning, and coconut sugar to a small saucepan and bring to a simmer.

Stir until just combined and then remove from heat. 

Add the baked wings to a bowl and toss with the buffalo wing sauce until evenly coated.

Serve on a large platter (with plenty of napkins) and enjoy!

Ingredients 

  • 4 pounds chicken wings
  • 1 tablespoon kosher salt
  • 2 tablespoons baking powder
  • 2 teaspoons garlic powder
  • 1 teaspoon fresh cracked black pepper
  • 2 cups buffalo hot sauce (I used Frank's RedHot Original Hot Sauce)
  • ½ cup dairy-free butter (or regular butter, if not dairy-intolerant)
  • ¼ cup lemon juice
  • 1 tablespoon Italian seasoning
  • 1 tablespoon coconut sugar

Instructions 

  • Preheat your oven to 425°F.
  • Pat the chicken wings dry and add them to a large bowl.
  • Toss the wings with salt, baking powder, garlic powder, and pepper until evenly coated.
  • Line a baking sheet with parchment paper (you will likely need 2 baking sheets for 4 pounds of wings) and place a wire rack on the baking sheet. If you don’t have a wire rack that fits within the baking sheet, go ahead and place the wings directly on the parchment paper.
  • Place the wings in a single layer on the wire rack, if using, and bake for about 1 hour until golden brown. For larger wings, cook for an additional 15 minutes.
  • While the wings are baking, add the buffalo sauce, butter, lemon juice, Italian seasoning, and coconut sugar to a small saucepan and bring to a simmer. Stir until just combined and then remove from heat.
  • Add the baked wings to a bowl and toss with the buffalo wing sauce until evenly coated. Season with additional salt and pepper to taste, if needed,
  • Serve and enjoy!!
