Please tell me I’m not the only one with a slight chicken salad obsession 🤪 When Kyle and I visited Georgia I came across the restaurant chain @chickensaladchick and I felt like I had found my people!
Today’s Lemon Tahini Chicken Salad was a fun new flavor combination inspired my a desire to opt out of mayo but still opt in to creaminess. Tahini to the rescue!
2 chicken breasts, cooked and diced
1/2 apple, diced
1 rib of celery, diced
1/2 cup hazelnuts, roughly chopped
1 green onion, thinly sliced
1/4 cup purple cabbage, thinly sliced
1/4 cup cilantro, chopped
1/4 cup tahini
2 tbsp lemon juice
2 tbsp olive oil
2 tsp dijon
1 tbsp dill, chopped
2 tsp red wine vinegar
1 tsp salt
1/2 tsp pepper
Combine your tahini, lemon, olive oil, dijon, vinegar, salt, pepper, and dill in a large bowl and whisk until combined. Add your chicken and toss to coat. Add your remaining ingredients and toss until combined. Serve!
