CRISPY BAKED GROUND BEEF TACOS (grain-free, dairy-free)

Crispy Baked Ground Beef Tacos (grain-free, dairy-free)

Ingredients 

  • 1 lb ground beef
  • 1 small white onion small diced
  • 3 cloves garlic minced
  • 2 tbsp taco seasoning I used @sietefoods
  • 3 tbsp tomato paste
  • 1 can diced green chiles
  • 1 tsp salt
  • 1 can refried beans I used @sietefoods
  • grain-free tortillas I used @sietefoods cassava flour tortillas
  • Avocado or olive oil spray
  • Serve with: iceberg lettuce diced tomatoes, cilantro, jalapeño crema (see below for recipe)

Instructions 

  • Preheat your oven to 400
  • Heat a large sauté pan over medium
  • Add your ground beef and diced onion to the pan, breaking up the beef into small pieces, and cook for 5-7 minutes until the beef is browned
  • Drain off all but 1-2 tbsp of accumulated juices (I do this by sopping it up with a paper towel)
  • Add your garlic, taco seasoning, and salt and cook for another minute
  • Make a well in the center and add your tomato paste, stirring for a minute before incorporating into the rest of the mixture
  • Add your diced green chiles, stir to combine, and cook for 5-7 more minutes
  • While the meat mixture finishes cooking, warm your refried beans so they are easily spreadable and your tortillas so they are pliable
  • When your meat finishes cooking, assemble your tacos on a parchment-lined sheet pan by adding a generous smear of refried beans and about 1/4 cup of ground beef mixture to one half and fold over
  • Repeat for the remainder of your tacos
  • Spray your tacos with avocado or olive oil spray
  • Place a sheet pan on top of your tacos and bake for 13-15 minutes
  • Remove the sheet pan off the top of your tacos and set the oven to broil
  • Broil for 2 minutes so the tacos get nice and crispy
  • Remove from oven and serve with toppings/dips of your choice – I used iceberg lettuce, jalapeño crema*, cilantro, and tomatoes
  • ENJOY!
