Flourless Espresso PB Brownies (GF/DF)

Espresso. Chocolate. Peanut Butter. Need I say more?

My mom said these brownies are “perfect” 🥺🥺

1 cup nut butter (I used espresso nib PB @eliotsnutnutters)
1/2 cup coconut sugar
1/4 cup maple syrup
1 tsp vanilla
2 eggs
1/3 cup cacao powder
1 tbsp instant coffee or espresso powder
1 tsp baking powder
1/2 cup chocolate chips

Line an 8×8 baking dish with parchment paper. In a large bowl, cream together your nut butter, sugar, maple syrup, vanilla, and eggs. Mix in cacao powder, coffee powder, and baking powder until well combined. Stir in chocolate chips. Mixture will be THICK. Bake at 350 for 23-25 minutes. Enjoy!
