Simple, summery, and soooo delicious!! The perfect make ahead dish for summer entertaining!!

– 2 lbs of tomatoes
– 4 cups watermelon
– 1/2 jalapeño
– 1 shallot
– 1 clove garlic
– 1/2 cup basil
– 1/4 cup mint
– 1 tbsp champagne vinegar
– 2 tsp salt
– 1/3 cup olive oil

Combine tomatoes, watermelon, shallot, garlic, and jalapeño in a blend and blend for 1 minute on med-high speed. Add basil, mint, salt, and vinegar and blend 1 minute. Turn speed to low and slowly drizzle in olive oil while the motor is running. Strain soup through a fine mesh sieve and chill for at least 4 hours. Serve chilled with a drizzle of olive oil and a garnish of basil 🌿😋
