Hormone-Balancing Raw Carrot Salad

Among their many benefits, raw carrots have been shown to help with digestion and mitigate estrogen dominance! This recipe is a delicious way to incorporate raw carrots into your meals 🤗

Ingredients:
4 carrots, shredded
2 scallions, finely chopped (green parts only)
2 tbsp cashews, roughly chopped
2 tbsp cilantro
1.5 tbsp olive oil
1.5 tsp champagne vinegar
1.5 tsp German mustard
juice of half a lemon
1 tsp salt
1 tsp pepper

This recipe’s directions are nothing fancy 🤪 Simply combine all the above ingredients and serve!!

Recipe Notes:
– I prefer to grate the carrot to make it easier to eat but you can peel them or cut them into matchsticks 🥕
– Basil, parsley, or mint would be great subbed in for cilantro 🌿
– Sub dijon, grainy mustard, spicy mustard, or whatever mustard you like for German mustard (go wild!) 💛
– This is a great side side dish but could also be used as a yummy, healthy appetizer 🥗
