Rainbow Salad
I will be the first to admit that I don’t always know which nutrients I’m not getting enough of. Eating the rainbow is one way to ensure we are getting a wide variety of necessary nutrients!
Rainbow Salad
Ingredients
- purple cabbage
- green cabbage
- red bell pepper
- green onion
- roasted cashews
- cilantro
- carrots
Instructions
- Roughly chop and combine your ingredients and enjoy with your favorite dressing (I chose miso lime vinaigrette)!

This recipe is meant to be a guideline as to what you can include in order to achieve a variety of colors. Feel free to incorporate whatever colorful veggies you want!
