Refined Sugar-Free Strawberry Sauce

Most strawberry jams and sauces you’ll find at the store are packed with artificial sweeteners and preservatives that are disruptive to our hormones, gut health, and skin 🙁 Strawberries are naturally sweet and when simmered down with a bit of lemon juice and honey, they make a super simple, refined sugar-free topping for your pancakes, waffles, or sundaes!🍓 (Plus, if you pick then ripe when they’re in season, you won’t even need the honey!)
Ingredients:
1 lb strawberries
1 tsp lemon juice
1/4 cup water
2 tbsp honey (more if your berries aren’t very sweet)
1 tbsp almond flour (add at the end if mixture is too thin)
Directions:
Quarter your strawberries and add to a saucepan over medium heat along with your water and lemon juice. Simmer for 10 minutes over medium-low heat. The mixture will begin to thicken a little. Add your honey and simmer for another 10 minutes. If your mixture is still very thin, add 1 tbsp almond flour. Remove from heat and allow to cool before serving.
