These are delightfully crispy and reminiscent of childhood but with a sophisticated twist!
4 chicken thighs cut into nuggets
1/2 box @simplemills rosemary and sea salt crackers, crushed
1 tbsp chopped fresh rosemary
2 tsp @traderjoes Ajika spice (optional but highly recommended)
1 tsp salt
1 tsp black pepper
1/2 cup almond flour
1 egg lightly beaten
Preheat oven to 375. Combine crushed crackers, Ajika seasoning, rosemary, and salt and pepper in a low bowl or on a plate. Set up your “breading” station: flour, then beaten egg, then cracker mixture. Dip your nuggets in the flour first, then in the egg, then in the cracker mixture and place on a sheet pan. Drizzle the nuggets with olive oil (or spray) and bake for 15 minutes until lightly crispy. Allow to cool, then ENJOY!🤩
