Silkiest Hummus from Dried Chickpeas

Ingredients:

For the soaked chickpeas

-8oz dry chickpeas 

-2 sprigs rosemary

-4 cloves garlic, peeled

-1/2 onion, peeled

-1 bay leaf

-2 tsp salt, divided 

Drizzle of olive oil  

Hummus (in addition to your soaked chickpeas from above)

-1/2 cup olive oil 

-1/3 cup tahini

-juice of 1.5 lemons

-3 cloves garlic

-salt and pepper to taste 

-za’atar, smoked paprika, cumin, flaky sea salt, cilantro, and pine nuts for garnish 

Method:

Soak the chickpeas in filtered water overnight. Rinse and add to a pot with enough filtered water to cover them by 2 inches. Add rosemary, onion, garlic, bay leaf, olive oil, and 1 tsp salt. Simmer for 1.5 hours. Drain and add to food processor.
