Inspired by my love of (and never ending craving for) sushi rolls, I bring you the much easier to assemble Spicy Salmon Sushi Bowl! Loaded up with all your favorite sushi toppings, this is the perfect healthy way to satisfy your sushi craving at home✨

Spicy Salmon:
1 lb salmon, cut into 1 inch cubes
1 tbsp sriracha
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp salt
drizzle of avocado oil for your pan

In a small bowl, add your salmon cubes, spices, sriracha, and salt and toss until the spices have evenly coated the salmon
Heat a drizzle of avocado oil in a skillet over med-high heat
When your oil has heated, add your salmon pieces to the skillet in a single layer and cook for 3 minutes each side

Spicy Pickled Cucumbers:
2 Persian mini cucumbers, sliced into 1/4 inch rounds
1 tsp salt
2 tbsp apple cider vinegar
1 clove garlic, minced
1 tsp toasted sesame oil
2 tsp honey
1/4 tsp chili flakes
1/2 tsp sesame seeds

Toss sliced cucumbers with salt and let sit and “sweat” for 15 minutes. Drain off excess moisture and toss with your remaining ingredients. Voila! You have quick spicy asian-style pickled cucumbers.

For the sushi bowls:
sushi rice
shaved carrot
green onion
sesame seeds
spicy mayo (1/4 cup mayo + 1 tbsp sriracha)
tamari (or soy sauce if not #glutenfree)
