Sweet and Smokey Delicatta Squash with Bacon and Caramelized Shallots

Wow that recipe title was a mouthful but every word was so important, you know?🤪

This would be a perfect side to bring to your Friendsgiving!🍠🥓🧅 And since we’re talking holidays, let’s talk holiday ATTIRE: these pants from @shopthechicgirl are a new staple in my fall party wardrobe. So comfortable and SO cute✨

Okay back to the food…😜
– 1 delicata squash cut in half, seeds removed, and cut into half inch wedges
– 1 tbsp olive oil
– 1/2 tbsp maple syrup
– 1 tsp salt
– 1/2 tsp smoked paprika
– 1/2 tsp chili powder
– 4 slices thick cut bacon
– 2 shallots, thinly sliced
– fresh thyme leaves for garnish

Toss the delicata squash wedges with olive oil, salt, pepper, smoked paprika, chili powder, and maple syrup. Roast for 15 minutes, flip and roast for another 15 minutes.
Cut bacon into 1in pieces and fry over medium-high heat until crispy. Remove the bacon with a slotted spoon and place on a paper towel.
Reserve 1 tbsp of the rendered bacon grease and reduce the pan heat to medium-low. Sauté shallots for 7-10 minutes until caramelized.
Once your squash is toasted, your bacon crisped, and your shallots caramelized, it’s time to plate and garnish with thyme. ENJOY!😋
