Whole Roasted Cauliflower with Herbed Cashew Cream

For the Cauliflower: 

– 1 head of cauliflower 

– Olive oil to lightly coat

– Salt 

Herbed Cashew Cream:

– 3/4 cup raw cashews soaked overnight or boiled for 10 minutes 

– 1/2 cup water + more as needed to thin of out 

– 2 cloves garlic

– Juice of 1 lemon

– Zest of half a lemon

– 2 Tbsp olive oil

– 1/4 cup each Italian parsley, dill, and mint + more for garnishing

– Salt and pepper to taste 


– Golden raisins

– Capers

– Pine nuts

Remove the cauliflower leaves and core. Coat lightly with love oil. Sprinkle with salt. Place in an oven safe skillet and bake for 45 minutes at 325. Meanwhile, make the herbed cashew cream. After 45 minutes, spread a layer of herbed cashew cream on top of the cauliflower and bake for an additional 15 minutes. When the cauliflower is fork tender, remove from the oven and allow to cool for 2-3 minutes. Garnish with more cashew cream, golden raisins, capers, pine nuts, parsley, mint, and dill. Serve!!
