Healthier Peanut Butter Blossoms (GF/DF)

I made two versions of peanut butter blossoms: a regular version and a “healthified” version (these) and, in my opinion, these were BETTER!! Both taste and texture-wise. A win for healthy baking!🍪✨

Ingredients:

  • 1 cup blanched almond flour
  • 2 tbsp tapioca flour
  • 2 tbsp coconut flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 cup coconut sugar + more for rolling cookies
  • 1/3 cup smooth peanut butter
  • 3 tbsp coconut oil (solid, not melted)
  • 1 egg
  • 1 tsp vanilla
  • 12 chocolate kisses

Directions:
In a small bowl, add the three flours and gently combine with a fork. In a medium-sized bowl, add the coconut sugar, peanut butter, vanilla, coconut oil, and egg to a bowl and beat until well combined. Add baking soda, salt, and flour mixture and mix until combined.

Roll into 1.5 inch balls and cover in coconut sugar. Add to a lined or greased cookie sheet and gently flatten with your palm. Bake for 11 minutes at 350. Remove from the oven and gently press a kiss into each cookie. Allow to cool and ENJOY!! 😋💋
