GLUTEN-FREE SHRIMP TACOS WITH CORN SALSA

Simply seared, smoky shrimp are paired with guacamole and a fresh corn salsa and stuffed into a gluten-free tortilla for a ridiculously easy and tasty taco.

These Gluten-Free Shrimp Tacos with Corn Salsa are one of my first viral recipes, and for good reason!
Sweet and tender shrimp are tossed with chili powder, smoked paprika, a pinch of cayenne, and a bit of lime juice.
They’re seared off on the stovetop until perfectly cooked, which takes less than 5 minutes!


While the shrimp are finishing up, you can grab your tortillas of choice and think about assembly. I suggest a thick dollop of guacamole and some of my Fresh Corn Salsa.
Place in your favorite gluten-free tortilla and you have yourself a craveworthy taco that took just a few minutes to make.

Ingredients for Shrimp Tacos With Corn Salsa
When it comes to tacos, the possibilities really are endless. Beef and chicken are staples for many of us, but here, shrimp takes the prize. Here’s what you’ll need for this quick and simple taco recipe.

- Shrimp: A quick-cooking protein, shrimp is ready in just a few minutes. To make this recipe even easier for you, buy shrimp with the shells and tails removed.
- Spices: Chili powder, smoked paprika, and a bit of cayenne.
- Honey: This natural sweetener is a nice contrast to the spicy, smoky flavors of the shrimp.

Pin It- Lime Juice: A zesty addition that also helps break down the protein as it sears in the pan.
- Tortillas: I used @sietefoods grain-free cassava tortillas, but any corn or flour tortilla (if you aren’t gluten-free) works too. I like to char them over my open gas stove for a second or two. Just watch them closely because they can burn easily!


- Corn Salsa: I HIGHLY recommend my fresh corn salsa, but if corn is out of season or you’re trying to get dinner on the table ASAP, then frozen corn is also fine. Just be sure to thaw it before adding it to the taco!
- Guacamole: Homemade or store-bought guacamole is a nice, creamy addition. Sliced avocado will also work!
How to Make Shrimp Tacos
In a bowl, toss the shrimp together with the tablespoon of olive oil, salt, chili powder, smoked paprika, cayenne, honey, and lime juice, mixing well to combine.


Heat a drizzle of olive oil over medium-high heat.
Add the shrimp in a single layer, including any sauces from the bowl, and cook for 2 minutes on each side.
You know shrimp are cooked when they turn an opaque pinkish-orange color and curl slightly.


Remove from heat and allow to cool for 2 to 3 minutes. Assemble the tacos with plenty of guacamole and Corn Salsa. Enjoy!

- 1 pound shrimp, peeled, deveined, and tails removed
- 1 teaspoon salt
- 1 tablespoon olive oil, plus a drizzle for the pan
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- A few dashes of cayenne
- 1 tablespoon honey
- Juice of 1 lime
Serving Suggestions:
- 6 tortillas (I used Siete Foods grain-free cassava tortillas)
- 2 tablespoons guacamole, per taco
- Corn salsa
Instructions
