To keep it real, lunchtime can be the most problematic meal. If you haven’t thought ahead, you may end up staring at the fridge, waiting for something to grab your attention. For me, this is especially true in the summertime when I’m craving something light and fresh but something still satisfying. 

Enter, my Chicken Bacon Green Goddess Ranch Wraps. Packed with pre-cooked chicken, bacon, crispy lettuce, and tomatoes, this wrap will satisfy any lunchtime cravings.

But the best part of this recipe is hands down my homemade herbaceous Green Goddess Ranch Dressing. It takes just a few minutes to whip up and is a delicious addition to this wrap and other sandwiches and salads too. 

And because it is summertime, I’m all about packing this wrap and taking it to go — even if that just means taking a lunch break outside in my backyard!

Ingredients for Chicken Bacon Wraps

Ready to eat? Here’s what you’ll need for this protein-packed and tasty summertime wrap.

  • Cooked Chicken: Lunchtime shouldn’t be complicated, which is why I suggest using pre-cooked or rotisserie chicken. Buying a rotisserie chicken at the beginning of the week is a great timesaving hack, ensuring you have nourishing protein-forward meals all week long. 
  • Romaine Lettuce: This lettuce has the ultimate crunch. I shred most of it so it’s easier to bite into the wrap, pouring the dressing all over it. I also like to save 4 large leaves since they act as a barrier between the wrap, the dressing, and the juicy tomato. No soggy wrap here! 
  • Tomato: If you’re making these wraps in the summer — and I truly hope you are! — then a juicy slice of tomato is exactly what you need here. Bacon, lettuce, and tomato are a tried and true combo, after all!

  • Bacon: While this would be just as good as a chicken and green goddess wrap, why not add bacon right?! Adding two slices per wrap makes this a standout lunch. I look for a brand that is uncured, has no sugar added, and is free of nitrates and nitrites. 
  • Burrito-size Wraps: Wraps are the perfect travel meal because they’re easy to pack and eat without the need of a plate or silverware. @sietefoods grain-free burrito sized-tortillas ensure all the chicken, bacon, and veggies stay safely tucked inside. 
  • Green Goddess Dressing: Even if you don’t make these wraps, you absolutely NEED to try this dressing! It’s tangy, bright, and a gorgeous, vibrant green color. I love dipping extra veggies into it or dolloping a generous portion onto a grain bowl. In this wrap, it’s the literal glue that holds everything together.

How to Make Chicken Bacon Green Goddess Ranch Wraps

To start, make the bacon by preheating the oven to 375°F. Add the bacon slices to a parchment-lined baking sheet and bake for 15 to 18 minutes or until done to your liking. Watch out… it only takes a few minutes for the bacon to go from crispy to burnt! 

In a medium-sized bowl, toss half of the green goddess ranch dressing with the shredded romaine. 

When you’re ready to assemble, quickly warm the tortillas in a pan. It only takes a few seconds per side. 

Take each wrap and add a whole lettuce leaf, followed by the sauced shredded lettuce, tomato slices, shredded chicken, bacon, and extra dressing. 

Roll to wrap, cut in half, and enjoy immediately, or pack for a picnic lunch!

Ingredients 

  • 4 cups cooked chicken, shredded (I used rotisserie)
  • 2 small heads romaine lettuce, shredded (save 4 large leaves for the wrap)
  • 1 large tomato, cut into thin slices
  • 4 burrito-size wraps of choice (I use Siete burrito wraps)
  • 8 slices bacon
  • 1 batch Homemade Green Goddess Ranch Dressing

Instructions 

  • Preheat the oven to 375°F.
  • Add the bacon slices to a parchment-lined baking sheet and bake for 15 to 18 minutes, or until done to your liking. Keep a close eye on the bacon to ensure it doesn’t burn!
  • In a bowl, toss half of the green goddess ranch dressing with the shredded romaine.
  • Assemble the wraps by layering a romaine leaf, shredded and tossed romaine, tomato, cooked chicken, bacon, and a generous drizzle of dressing on each tortilla. Fold to wrap, cut in half, and ENJOY!
