Dairy Free Mashed Potatoes - Olivia Adriance

You all know I love a good, creamy sauce. It elevates a weeknight meal from basic to luxurious. Now, the only thing better than a healthy meal with a heavenly sauce is piling it on top of mashed potatoes. Well, these Dairy-Free Mashed Sweet Potatoes are my answer to making all of your dreams come true. 

Sweet potatoes are the main character here, but because I use a white sweet potato, your guests may think they’re eating russet potatoes.

Sweet potatoes are nutrient-rich and full of antioxidants, potassium, and iron. I prefer a sweet potato over any other type of potato any day of the week. Here, they are mashed to perfection with the addition of coconut cream and almond milk.

Ingredients for Mashed Sweet Potatoes

Three ingredients are all it takes for the most creamy, decadent mashed sweet potatoes.

  • Sweet Potatoes: I used white sweet potatoes here, which mimic the look of regular sweet potatoes. The white variety is dryer than the typical orange sweet potatoes. They also tend to be milder in taste and flavor. This recipe will also work with orange sweet potatoes or yams. 
  • Coconut Cream: While a lot of dairy-free mashed potato recipes call for vegan butter, I prefer using coconut cream. This thicker, indulgent ingredient makes for the creamiest, smoothest potatoes. Coconut cream is just the thick layer on top of a can of coconut milk. Placing a can of coconut in the fridge to chill makes it much easier to scoop out the cream. Or, you can also buy a can of coconut cream and use that instead! And you really can’t taste the coconut – I promise! 
  • Almond Milk: To thin out the mashed potatoes and make them a bit more creamy, I add a tad of almond milk. Any type of unsweetened nut milk should work here. 

How to Make Dairy-Free Mashed Sweet Potatoes

To make the most delicious mashed potatoes, you’ll need to start by peeling and cubing the potatoes. I cut them into 2-inch chunks. Cutting them saves time in the cooking process and also helps remove excess starch. A starchy potato can lead to a gluey mashed potatotes, which you definitely don’t want! 

Put the potatoes in a large pot and cover with 1 inch of water. Add 1 teaspoon of salt and bring the pot to a boil. Reduce the heat and simmer uncovered, just until the potatoes are fork-tender. This will take around 13 minutes or so, but check them often as they’re cooking. 

Drain the water from the pot and mash them in the same pot using a potato masher or a handheld mixer for an even smoother finish. Add in the coconut cream and almond milk. Season generously with salt and pepper. 

Mix again and taste, adjusting the seasoning to your preference. Serve and enjoy!

Ingredients 

  • 4 pounds white sweet potatoes, peeled and cut into 2-inch cubes
  • cups coconut cream
  • ½ cup unsweetened almond milk
  • Salt and pepper to taste

Instructions 

  • Add the cubed potatoes to a large pot and cover with about 1 inch of water.
  • Add 1 teaspoon of salt to the water and bring to a boil.
  • Reduce the heat and simmer, uncovered, until the potatoes are fork-tender (this took about 13 minutes for me, but check your potatoes fairly often).
  • Drain the water from the potatoes and mash them in the same pot using your preferred method.
  • Add in the coconut cream and almond milk and generously season with salt and pepper.
  • Mix again and taste, adding more salt as needed. Serve and enjoy!
