Roast Beef Fajita Bowls

There’s almost nothing I love more than cooking a new meal, which proves how unbeatable this is given the fact that I make it once a week 🙃 It’s not my fault it’s irresistible!! Well actually, I suppose it is…but it can be your fault too that this insanely simple dinner graces your table once a week FOREVER 😂

Recipe below is for the roast beef and fajitas. I switch up the toppings just to keep life a lil spicy, ya know?🌶

ROAST BEEF AND FAJITA VEGGIES✨
Ingredients:
– 3 lbs chuck roast
– 2 bell peppers
– 1/2 a red onion
– 1 tbsp olive oil
– 1/2 tsp each: cumin, paprika, smoked paprika, garlic powder, chipotle powder
– 2 tbsp salt and pepper

Directions:
Preheat oven to 325. Add your roast to an oven safe dish and season generously on both sides with salt and pepper (about 1.5 tbsp). Cover with foil and bake for 3.5-4 hours.

Chop your peppers lengthwise into about a quarter inch strips. Chop onion into similar lengths. Toss with olive oil, your seasonings, and 1/2 tbsp each of salt and pepper. Roast in the oven at 425 for 25 minutes.

Serve your roast and fajita veggies with toppings of your choice! Some of my favorites are avocado, diced cherry tomatoes, cilantro, green hummus, and homemade tomatillo salsa (recipe in my reels) 🫑🍎🧅🧄
