This Easy Buffalo Pulled Chicken Salad relies on grocery store hacks, including rotisserie chicken. Buying pre-cooked chicken is a great way to ensure I’m eating protein-focused meals. 

Other grocery store hacks for this recipe include pre-shredded cabbage mix and shredded carrots. Again, it’s nice to let the store do the hard work for you sometimes. You don’t need to prove to anyone that you know how to shred cabbage, right?!

Ingredients for Buffalo Chicken Salad 

Your next favorite chicken salad is only a few ingredients away.

  • Rotisserie Chicken: Is there anything better (or easier) than buying a pre-cooked whole chicken at the grocery store? I think not! 
  • Buffalo Sauce: Use your favorite variety. I like @noblemade since it’s free of any unnecessary oils or sweeteners. 
  • Veggies: Go ahead and buy the pre-shredded cabbage mix and carrots. You’ll thank yourself later! 
  • Green Onion: This adds freshness and a pop of color. 
  • Ranch Dressing: Again, use whatever you love but I highly recommend @motherraw which is gluten-free and plant-based. 
  • Romaine Lettuce: Crisp and bright, big spears of romaine are the perfect vessel for this flavor packed salad. 

How to Make Buffalo Chicken Salad 

Open and dump is the name of the game here. Here’s how you make this flavorful chicken salad recipe! 

In a large bowl, toss the shredded chicken with the buffalo sauce. I like to use hot or warm chicken from a fresh rotisserie chicken, but you can also make this with cold leftover chicken. Up to you! 

Once mixed, add the cabbage mix, shredded carrot, sliced green onion, and ranch dressing. Stir until everything is incorporated. Season with salt and pepper, adding additional buffalo sauce or ranch dressing if needed. 

Serve immediately on lettuce cups, in a sandwich, or by the spoonful. Store leftovers in the fridge for three to five days.

Ingredients 

  • 1 rotisserie chicken, shredded (or 4-5 cups cooked chicken)
  • ¾ cup buffalo sauce (I used Noble Made)
  • 1 cup cabbage mix
  • 1 cup shredded carrot
  • ¼ cup green onion, thinly sliced
  • cup ranch dressing, (I used Mother Raw)
  • Romaine leaves, for serving

Instructions 

  • In a large bowl, toss the shredded chicken with the buffalo sauce.
  • Add the cabbage, carrots, green onions, and ranch dressing to the buffalo chicken.
  • Mix and season with salt and pepper, and add more dressing/buffalo sauce as needed.
  • Serve with lettuce cups or on a sandwich.
