Even as a recipe creator and developer, I rely on rotisserie chicken as a reliable protein option. Buying one at the beginning of the week and making lunches with it is a great meal prep hack.

In this lettuce cup recipe, the chicken is tossed with a pre-made Caesar dressing, a bag of slaw mix, and slivered almonds for crunch. In less than 10 minutes, you’ll have a delicious meal that tastes and looks fancier than it is.

Ingredients for Rotisserie Chicken Caesar Lettuce Cups

  • Rotisserie Chicken: The only thing standing between you and a protein-packed lunch or dinner is a rotisserie chicken. Really. Thankfully, most grocery stores (including – Whole Foods and Central Market, where I often shop) keep these cooked chickens prepped and ready for you throughout the week. 
  • Caesar Dressing: While you could certainly make your own, a bottle of pre-made Caesar dressing in the fridge means you can be eating lunch in less than 10 minutes. 
  • Slaw Mix: This isn’t just for coleslaw! A bag of pre-shredded cabbage mix can help you get any meal done faster. Look for it in the produce section by the lettuces in the grocery store. 
  • Slivered Almonds: Again, we’re trying to make this easy here! A bag of slivered almonds means that’s one less thing you need to pull a cutting board out for. Of course, if you only have whole almonds, just give them a chop before throwing them in. 
  • Green Onion: For a bite of freshness, green onion (also known as scallions) brings an oniony, garlic flavor without being too overpowering. Try adding them to any salad or Asian-inspired dish for a flavor boost. 
  • Romaine Lettuce: What’s cuter than a lettuce wrap?! These greens stay crisp in the fridge all week, so you’ll never be left with a sad, soggy wrap. 

How to Make Rotisserie Chicken Caesar Lettuce Cups

MAKE THE SALAD

In a medium-sized bowl, add the chicken and about 1/2 of the bottle (or 4 ounces) of the dressing. Toss until the dressing evenly coats the chicken. Taste and season with salt and pepper. 

Add the remaining ingredients (cabbage slaw mix, slivered almonds, green onions) to the bowl. Gently mix to combine, adding more Caesar dressing until the salad is coated to your liking. 

ASSEMBLE

Add a generous portion of the salad to the romaine lettuce leaves. Enjoy! 

FAQs & Tips for Rotisserie Chicken Caesar Lettuce Cups

How long will this last in the fridge? 

You can make the chicken salad filling ahead of time. It will keep for about four days, meaning if you make it on Monday then you have lunch through Thursday! Keep the romaine lettuce leaves in the fridge, with a paper towel in a sealable bag. This will keep them crunchy and make getting lunch together even simpler! 

Is there another dressing you’d recommend besides Caesar? 

I’m a fan of Caesar! It’s creamy and savory and just plain delicious. If Caesar dressing isn’t your thing, you can absolutely use something like Buffalo dressing. @primalkitchen has great gluten-free options free of seed oils, including a Buffalo sauce.  

How else would you suggest serving this? 

This would be just as delicious between two slices of bread as a sandwich or even as a wrap with @sietefoods cassava or almond flour tortillas. And there’s no shame in eating it out of the bowl if that’s the way your day is going too!

Ingredients 

  • Meat from 1 rotisserie chicken, shredded (or about 5 cups of cooked chicken)
  • 1 bottle of your favorite Caesar dressing (I used SideDish Miso Caesar)
  • 1 ½ cups cabbage slaw mix, roughly chopped
  • ½ cup slivered almonds
  • ½ cup green onions, diced
  • Salt and pepper to season
  • Romaine lettuce leaves, for serving

Instructions 

  • Add your chicken and about half your bottle of dressing to a medium sized bowl and toss until the dressing evenly coats the shredded chicken.
  • Taste and season with salt and pepper.
  • Add the remaining ingredients and gently mix to combine, adding more Caesar dressing until the mixture is coated to your liking.
  • Serve on romaine lettuce leaves.
