Simplicity at its finest. This Avocado Tomato Herb Salad is a side dish that I didn’t think was worth posting, at first. But the joke is on me because this salad went viral the first time I posted it a few years ago. 

This proves that healthy, delicious food doesn’t need to be complicated.

A few ingredients can come together beautifully for a side dish that you and your family will crave time and time again.

This fresh salad is one that I’ve been making for years now and I have a feeling it will be a staple in your meal routine too. Enjoy!

Ingredients for Avocado and Tomato Salad

A simple salad calls for simple ingredients. Below is everything you’ll need.

  • Avocados: A great source of healthy fats and antioxidants, avocados are always in my grocery cart. 
  • Tomatoes: Sweet grape or cherry tomatoes are ideal. 
  • Basil: Fresh is key here. 
  • Extra Virgin Olive Oil: Grab your best bottle. Since the dish is so simple and we’re not cooking the oil, the dressing really sings. 
  • Lemon: This ensures the avocado doesn’t brown and provides a bright pop of flavor.

  • Champagne Vinegar: Mild in flavor, this vinegar adds a bit of acidity to the dressing. You can substitute another vinegar such as apple cider or white wine vinegar, but it will change the taste. 
  • Honey: A tad of sweetness to round out the dressing. 
  • Ginger: This is optional but adds an unexpected kick if that’s what you’re seeking.  
  • Salt and Pepper: A must for any salad, but especially simple ones. 
  • Flaky Sea Salt: @maldonsalt is my go-to brand for enhancing a dish’s flavors. It works great on sweet treats too, like my Chocolate Chip Cookies.

How to Make Avocado Tomato Salad

In a large serving bowl, add the olive oil, lemon juice, vinegar, honey, ginger (if using), salt, and pepper to a bowl and whisk to combine. 

Gently toss the diced avocado with the dressing and set aside to marinate while you prepare the rest of your meal. I recommend that it sits anywhere from 10 to 30 minutes. 

When ready to eat, add the tomatoes and basil. Generously drizzle with additional olive oil and season with flaky sea salt.

Serve and enjoy!

Ingredients 

  • 2 avocados, diced largely
  • 1 cup grape or cherry tomatoes, halved
  • Handful of basil leaves
  • ¼ cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tablespoon champagne vinegar
  • 1 teaspoon honey
  • ¾ teaspoon grated ginger
  • Salt and pepper to season
  • High quality olive oil for drizzling (I used Graza)
  • Flaky sea salt for serving (I used Maldon Salt)

Instructions 

  • Add the olive oil, lemon, vinegar, honey, ginger, salt, and pepper to a bowl and whisk to combine.
  • Gently toss the diced avocado with the dressing and set aside to marinate while you prepare the rest of your meal. I let it sit anywhere from 10 to 30 minutes.

Notes

I’ve tried to make this more complicated with other ingredients, but have always come back to this basic recipe. But many of you have boosted the salad with chopped cucumber and chickpeas for added protein.
