Crispy Brussels sprouts, salty bacon, sweet maple syrup… Need I say more?!

Now, I love Brussels sprouts year-round, but particularly love them during the holidays.
While I tested quite a few variations on this classic vegetable side, I honestly decided that easy is the way to go. Because when it comes to the holidays, you don’t need to make things overly complicated or complex.
That’s why we’re keeping it simple today with this Easy Maple Roasted Brussels Sprouts with Bacon and Pomegranates recipe.
Brussels sprouts and bacon are a delightful pair. The smoky bits of the bacon get into the nooks and crannies of the sprouts.


While the addition of maple syrup provides a nice counterbalance of sweetness without altering the taste of the Brussels sprouts.
Topping it off with pomegranate seeds and a drizzle of balsamic glaze is completely optional.
But if you see these items at the store, I recommend picking them up. It’s the holidays after all, so why not go overboard just a little. Enjoy!
Key Ingredients for Maple Bacon Brussels Sprouts
Your favorite holiday side only takes a few simple seasonal ingredients. Here’s what you’ll need to pick up on your next grocery run.

- Brussels Sprouts: Look for sprouts that are bright green and firm. They should feel heavy for their size with tightly packed leaves.
- Maple Syrup: An essential ingredient for any holiday cooking, in my opinion!
- Bacon: Salty, crispy, smoky… What’s not to love? For a vegetarian version, feel free to omit.
- Garnishes: To add a pop of color, I like to sprinkle some pomegranate seeds over the top finished with a drizzle of either pomegranate molasses or balsamic glaze. Totally optional, but definitely worth it!

To begin, preheat the oven to 425°F.
Toss the halved Brussels sprouts on the sheet pan with avocado oil and maple syrup.
Spread around with your hands until evenly coated.


Season generously with salt and pepper. You can also season everything in a big bowl and then dump it onto a sheet pan, but why dirty up two dishes when you can do it all in one?!
Sprinkle the slices of bacon over the top.
Place the sheet pan in the preheated oven and roast for 20 minutes.


Toss everything together with a spatula and then return to the oven for another 5 to 10 minutes. You want the Brussels sprouts to be golden brown and the bacon to be crispy.
Remove from the oven and place the sprouts in your serving dish.
Top with pomegranate seeds. Drizzle with either balsamic glaze or pomegranate molasses.
Serve and enjoy!

MAPLE ROASTED BRUSSELS SPROUTS WITH BACON AND POMEGRANATES

Ingredients
- 2 pounds brussels sprouts ends removed and halved
- 2 tablespoons avocado oil
- 1 ½ tablespoons maple syrup
- 4 slices bacon, cut into ½-inch pieces
- Salt and pepper to season
Garnish with:
- Pomegranate arils
- Balsamic glaze or pomegranate molasses
Instructions
- Preheat your oven to 425°F.
- Toss the halved Brussels sprouts with oil and maple syrup and season generously with salt and pepper.
- Add the seasoned sprouts to a baking sheet in a single layer, being careful not to overcrowd the pan (overcrowding will prevent them from getting crispy).
- Sprinkle the bacon slices over top.
- Roast in the oven for 20 minutes, toss, and then return to the oven for another 5-10 minutes.
- Remove from the oven and top with pomegranate arils and balsamic glaze (or pomegranate molasses) when ready to serve.
