SPIKED PINEAPPLE GINGER SLUSHIE

I got the idea for this recipe from a drink we had at our favorite restaurant in Austin, @suerteatx! They serve a frozen pineapple mule with a fresh ginger kick that I knew I had to try and recreate! You’ll notice there is fresh cracked pepper, yes PEPPER, in this drink, which might have you a little skeptical but just TRUST. I have no idea if Suerte’s version includes black pepper…but I love the unexpected savory kick when paired with the intoxicating sweetness of pineapple🍍

Ingredients (makes 2):
3 cups frozen pineapple
3 oz tequila
3 oz lime juice
2 oz ginger honey simple syrup (recipe below)
1/2 inch knob of fresh ginger
A few grinds of black pepper

Blend all of your ingredients for 30 seconds to a minute until well combined. Garnish with fresh or dried pineapple and a slice of lime. Enjoy!🍹

HONEY GINGER SIMPLE SYRUP
1 cup water
1 cup honey
4 inch piece of ginger, roughly cut into large pieces

In a saucepan, bring your ingredients to a boil and then reduce to a simmer, whisking until the honey is dissolved into the water. Cover and simmer for 30 minutes. Remove from heat and let stand for another 30 minutes. Strain out the ginger and store in an airtight container.
