Protein Cosmic Brownie Cookie Dough Bark - Olivia Adriance

Inspired by the individually wrapped snack cake that made so many appearances in our school lunchboxes, this no-bake Protein Cosmic Brownie Bark features a thick layer of chewy, fudgy chocolate and a silky smooth chocolate glaze. 

The base comes together with coconut butter, coconut oil, almond butter, and maple syrup, as well as protein powder and collagen for an added boost. 

This combination helps support satiety while also offering benefits for skin, hair, and nails, which we love. 

Of course, it wouldn’t be a Cosmic Brownie moment without that signature chocolate topping. Finish it off with some dye-free sprinkles, and you’ve got a nostalgic treat that you can gladly enjoy in adulthood. Enjoy!

Key Ingredients for Cosmic Protein Brownies

No fake ingredients here, just wholesome ones you can feel good about. Here’s what you’ll need:

  • Coconut Butter: Made from pureed meat of the coconut, coconut butter is rich in healthy fats as well as fiber and essential minerals. I use the @artisanamarket brand, which you can find in many grocery stores or online.

Coconut Butter Substitutions

Because this is a no-bake recipe, I wouldn’t suggest substituting this for regular butter or any other ingredient here.

  • Coconut Oil: The addition of coconut oil helps give this bark a smooth, silky finish. And when melting chocolate chips in the microwave, it helps prevent them from burning. 
  • Almond Butter: You can swap this for another nut butter or even tahini, but it will change the overall taste.

  • Maple Syrup: To keep these treats refined-sugar-free, I used maple syrup as my sweetener of choice. Honey could also work. 
  • Vanilla Extract: A bit of vanilla to counteract all the chocolate. 
  • Dairy-Free Chocolate Chips: I like @hukitchen chocolate or @enjoyjustdate chocolate chips.  
  • Dairy-Free Chocolate Protein Powder: @bewellbykelly makes an amazing chocolate vegan and grass-fed beef protein powder. I opted for the vegan version for this recipe, but feel free to use whatever protein powder you like. Just note that if you choose unflavored or vanilla, the brownies won’t be as chocolatey. 
  • Collagen: Another way to add some protein to sweet treats or even beverages is to incorporate unflavored collagen. I like the @needed brand. 
  • Cacao Powder: Another dose of chocolate flavor, thanks to this superfood. 
  • Dye-Free Sprinkles: To give this bark its “cosmic” effect, I like to top it off with some dye-free sprinkles. You can find these in some grocery stores or on Amazon

How to Make Healthy Cosmic Brownies

To a small saucepan, add the coconut butter, coconut oil, almond butter, and maple syrup.

Heat on low, stirring occasionally, until there are no chunks remaining. Add the chocolate chips and vanilla extract and cook until the chocolate is just melted, stirring frequently.

Remove from heat.

Add the protein powder, cacao powder, collagen, and salt, stirring to incorporate.

Line a sheet pan with parchment paper (I used a 1/4 sheet pan) and spread the mixture evenly until it is 1/2 inch thick.

To make the chocolate topping, melt the chocolate chips and coconut oil in the microwave in 45-second increments, stirring between, until fully melted.

Top the brownie bark with the melted chocolate, smoothing into an even layer. Add the dye-free sprinkles. Refrigerate for a few hours until the bark is set. Slice and enjoy! Store any leftovers in the fridge.

Brownie Bark:

  • ½ cup coconut butter
  • ¼ cup coconut oil
  • ½ cup creamy almond butter
  • cup maple syrup
  • 1 teaspoon vanilla extract
  • cup dairy-free chocolate chips
  • ½ cup dairy-free chocolate protein powder (I used Be Well By Kelly)
  • 2 tablespoons collagen (I used Needed)
  • 1 tablespoon cacao powder
  • ½ teaspoon salt
