I’ve rounded up all of my favorite chicken recipes that either call for a rotisserie chicken or can easily be swapped to use one. Because if there’s one thing that will save your weeknight dinner (and your sanity), it’s a rotisserie chicken!
HEALTHY, QUICK, AND EASY ROTISSERIE CHICKEN RECIPES
If you’re in the mood for something cozy, a loaded salad, hearty bowl, or (my favorite) chicken salad, there’s something in here for you.
We’ve got lighter soups then heartier soups, so many different chicken salad recipes, comforting classics like chicken pot pie and fettuccine alfredo, and some one pan bakes that are perfect for meal prepping or feeding a crowd.
Most of these also come together in 20 minutes or less when you use a pre-cooked chicken! And all of them are gluten, dairy, and refined sugar-free, so there truly is a recipe in here for everyone!

LEMON DILLY CHICKEN SOUP
A super quick, flavorful, and light spring or summer soup recipe that will take like, 20 minutes to fully come together when you use a rotisserie chicken!
Chicken pot pie is a classic! And so simple when you use a ready made chicken. The veggies are just frozen veggies too so the hardest part is the crust, but it's so flaky and crispy, you won't be disappointed!
A delicious dairy-free cashew based alfredo sauce, with gluten-free fettuccine, and just sub in rotisserie chicken and this will be ready in 20 minutes!

One of my most popular salads to date! So many yummy components and different textures, with lots of protein from different sources like chicken, quinoa cooked in bone broth, and edamame.
Full of Mexican spices, beans, salsa, and chicken. Just sub out the chicken thighs and add the rotisserie chicken in at the last step to heat through, then serve!
If you want a salad that will last for meal prep… this is it! It actually doesn't contain any lettuce… just cucumbers, tons of herbs, chicken, chicken peas, a little bit of red onion, pumpkin seeds, and pistachios!
If you actually want to go through the effort of making enchiladas, go easy on yourself and use a pre-cooked rotisserie chicken so you have one less thing to do!
A classic Waldorf chicken salad but mayo-free! Literally just throw everything together in a bowl if you're using a rotisserie chicken. No cooking necessary!
