When the urge for a sweet treat hits, but you don’t want to spend time actually baking…make these 4-Ingredient Peanut Butter Date Caramel Sandwich Cookies!

The only thing you’ll have to make is the peanut butter date caramel, which is just four ingredients: dates, peanut butter, coconut cream, and a big pinch of salt. 

Blend everything in a high-speed blender or food processor until smooth, thick, and creamy, then sandwich the caramel between two cookies. This is where the “semi-homemade” approach really shines. 

You can absolutely bake your own cookies if you’d like (such as these or maybe these), but store-bought options work just fine too.

A semi-homemade treat with enough leftover caramel to dunk apple slices or stir into oatmeal, this recipe really couldn’t be easier. Here’s what you’ll need.

  • Dates: These nutrient-dense dried fruits are full of fiber, antioxidants, and minerals such as magnesium and potassium. When soaked, they become sticky and caramel-like. 
  • Creamy Peanut Butter: You can swap in another creamy nut butter, but it will change the overall taste of the caramel.

  • Coconut Cream: You’ll need just the thick, creamy top from a can of coconut milk for this caramel.

Recipe Tip

You can either buy a can of coconut cream or chill a can of full-fat coconut milk if you already have it (I use @nativeforestbrand coconut milk), in the fridge overnight. When ready to make the caramel, simply open the can and scoop off the thick, solid white cream. The rest of the coconut milk can be used for another purpose, like this dairy-free pasta recipe

  • Salt: A big pinch of flaky sea salt adds a depth of flavor and balances out the sweetness. 
  • Cookies: As I mentioned, you can absolutely bake your own cookies for this, but store-bought ones work just as well. I like the @skoutorganic soft-baked gluten-free, dairy-free, and refined sugar-free cookies. 

How to Make Peanut Butter Date Cookies

Add the dates to a bowl and cover with very hot water (it doesn’t need to be boiling, just very hot) and let them soak for 20 minutes. 

Drain the dates, then add them to a food processor with the peanut butter, coconut cream, and salt. Process until creamy and smooth. 

Sandwich a large dollop of date caramel between two of your favorite store-bought cookies. This recipe makes around 1 cup of caramel — so plenty for sandwiching between cookies or stirring into oatmeal or yogurt. Enjoy!

Ingredients 

  • 1 cup dates, soaked
  • ½ cup creamy peanut butter
  • cup coconut cream
  • Big pinch of salt
  • 1 box of your favorite store-bought cookies (I used Skout Organic. Simple Mills or Siete would also be great)

This recipe makes over 1 cup of date caramel. You’ll have plenty of leftovers to use however you’d like! This is delicious with apple slices, bananas, or stirred into oatmeal or yogurt.
