It’s known that chicken soup makes everything better. Whether you’re dealing with the sniffles or feeling sad, low, or unmotivated, a warm bowl of homemade soup can do wonders.
That’s particularly the case if you make my Rustic Tuscan Style Chicken Soup.
As a content creator, I know that seeing negative (sometimes hateful) comments is part of the territory. During some seasons, these naysayers roll right off my back.
But other times, I’ll read a comment or see a bad review and my whole mindset is turned on its end. That happened to be the case the day I planned to post this recipe.
I wasn’t feeling great mentally and was ruminating on how rude some people online can be.

In terms of this chicken soup, you’ll be embraced by its heartiness and warmth. Sautéed onions, carrots, and celery along with baby potatoes and pre-cooked chicken is comfort at its finest.

Ingredients for Tuscan Chicken Soup
When you are sick or down in the dumps, the last thing you need is a complicated recipe with tons of ingredients. This soup has minimal ingredients and can be easily customized to what you already have on hand.

- Veggies: Onions, carrots, and celery is a classic chicken soup combo. I also add in baby potatoes and kale or spinach for additional heartiness.
- Broth: Sipping on bone broth is one of the best things you can do when you’re under the weather. This healing ingredient is key to recovery as it nourishes the gut and can help with congestion.
- Chicken: Go ahead and use rotisserie chicken or make my super simple Lazy Girl Chicken Thighs or Chicken Breasts recipe.
- Herbs: Fresh thyme gives a homeyness to the soup while a garnish of fresh parsley at the end gives the soup a fresh, bright flavor.

Ready to be embraced by a warm hug? Heat the olive oil in a large Dutch oven or stock pot over medium-high heat.
Add the onions and salt, stirring to coat them in the oil. Cook for 3 to 5 minutes.
Recipe Tip
The trick to a flavorful soup is salt! Depending on the saltiness of your bone broth, you may need to add more or less. Taste and adjust later as needed!
Add the carrots, celery, and potatoes and cook for another 2 to 3 minutes. Add the garlic and thyme stirring to incorporate and allow to cook for another minute.


If you’re using fresh thyme, you’ll want to remove the stems from the pot before serving the dish.
Next, add the chicken bone broth and bring to a boil. Reduce the heat to a simmer and let cook for 20 minutes.
Check the potatoes at the 20-minute mark to ensure they are fork-tender.


Add the cooked shredded chicken and kale, stirring to combine.
Give the soup another 5 or so minutes to allow the kale to wilt a bit.
When ready to eat, serve with a garnish of fresh parsley and fresh cracked pepper. Enjoy!

RUSTIC TUSCAN STYLE CHICKEN SOUP

Ingredients
- 1 medium-sized sweet onion, diced
- 2 tablespoons olive oil
- ½ teaspoon kosher salt + more to taste
- 3 cloves garlic, minced
- 2-3 sprigs fresh thyme (can sub ½ teaspoon dried thyme)
- 2-3 carrots, diced ½-inch thick
- 2-3 celery stalks, large diced
- 1 ½ pounds baby potatoes of choice, halved
- 5 cups chicken bone broth
- 4 cups chopped green curly kale or spinach
- 5 cups cooked shredded chicken (I used my Lazy Girl Chicken Thighs recipe)
- Fresh parsley, for garnishing
Instructions
- Heat olive oil in a large Dutch oven or stock pot over medium-high heat. Add the onions and salt, stirring to coat them in the oil, and cook for 3 to 5 minutes.
