Let me introduce you to your new favorite low-sugar, snackable cookie. These Gluten-Free Banana Oat Cookies are made from naturally sweet overripe bananas and just 1/4 cup of maple syrup for the entire batch.
They come together with just a handful of pantry staples and are ready in under 30 minutes. Simply mix the wet ingredients, stir in the dry, fold in some chocolate chips, and you’re ready to scoop and bake.
I made a big batch on Sunday, thinking they’d last all week, but they somehow disappeared by Tuesday?!..

When you’re craving something yummy but not overly sweet, these simple oat-based cookies are perfect. Here are the ingredients you’ll need, along with a few easy swaps to make the recipe your own.

- Bananas: These cookies are one reason to let your bananas sit out on the counter for a few days! Overripe bananas are a sneaky way to sweeten up baked goods without the need for more sugar.
- Egg: I have yet to try an egg replacement; however, a flax egg (1 tablespoon of ground flax mixed with 3 tablespoons of water) should work fine. You may just not get the same rise as you would with a regular egg.

- Maple Syrup: You only need 1/4 cup of this natural sweetener for a full batch of cookies. You could also use honey.
- Gluten-Free Quick Oats: Quick or instant oats are flakier and thinner than old-fashioned or rolled oats. I had quick gluten-free oats on hand, so that’s what I used, but the recipe should work just fine if you want to use rolled oats instead.
- Almond Flour: To help bind these cookies.


- Ground Flax: Ground flaxseed is a great way to get some extra fiber. If you don’t have it, you can omit it completely.
- Cinnamon: Ground cinnamon enhances the flavor of many baked goods and provides a warm, cozy taste.
- Baking Soda: While these cookies don’t rise like a traditional chocolate chip cookie, baking soda helps create a more tender, chewier consistency.
- Chocolate Chips: @enjoyjustdate dark chocolate chips are naturally sweetened and are dairy-free too. You could also try this recipe using raisins or chopped nuts, such as walnuts.
How to Make Gluten-Free Banana Oatmeal Cookies
Go ahead and preheat the oven to 350°F. Line a sheet pan with parchment paper.
Add the mashed banana, egg, vanilla extract, and maple syrup to a medium-sized mixing bowl and whisk to combine.


Stir in the oats, almond flour, flax, cinnamon, baking soda, and salt. Mix until combined. Stir in the chocolate chips.
Using a cookie scoop or spoon, measure out about 2 tablespoons of cookie dough and place it on the cookie sheet. Flatten them to the desired thickness — they won’t spread much.


Bake at 350°F for 13 to 15 minutes. This recipe makes about 22 cookies, so do this in two batches. Enjoy!
