Shakshuka with Harissa and Dairy-Free Feta

One of my favorite healthy choices when we’re eating our for brunch that can now be enjoyed at home! My mom referred to this as “restaurant-worthy” 🙂 If you try it, you’ll have to let me know if you agree!

Ingredients:

– 2 tbsp olive oil

– 2 shallots, diced

– 1 bell pepper, diced 

– 1 clove garlic, minced

– 2 tbsp tomato paste 

– 1 15oz can diced fire roasted tomatoes 

– 2 tbsp harissa paste 

– 1/4 cup cilantro, chopped + more for garnish

– 1 tsp sweet paprika

– 1/2 tsp cumin

– 1 tsp salt

– @violife_foods dairy-free feta

– 1/2 an avocado

Directions:

Heat oil in a cast iron skillet over medium heat. Add shallots and sauté until translucent. Add bell pepper and sauté for 2-3 minutes. Add garlic and sauté one minute, stirring frequently. Make a hole on the center and center of the shallot and pepper mixture and add tomato paste, allowing to lightly caramelize for 15 seconds before combining with the other mixture. Cook for 2 minutes. Add diced tomatoes, harissa, and cilantro, stir and cook for another 5 minutes. 

Make four wells in the mixture and carefully crack one egg into each well. Turn heat down to medium low and cover. Cook for 5 minutes. Remove from heat and garnish with cilantro, avocado, feta. Enjoy!!😋
