This Creamy Spinach Artichoke Chicken Bake with Orzo has already come to my rescue a few times as a new mom, so I knew I just had to share it with you ASAP!
This dump-and-bake recipe truly couldn’t be easier. Simply add all the ingredients to a large casserole dish, give everything a good mix, and pop it into a preheated oven. About an hour later, dinner is ready to be served.
The combo of flavors in this chicken bake does not disappoint! Artichokes, tomatoes, and spinach give it a Mediterranean vibe, while the addition of gluten-free orzo makes it hearty and satisfying.

- Chicken: Boneless skinless chicken thighs cut into cubes remain perfectly tender when cooked with the rest of this casserole bake. Feel free to swap in cubed chicken breasts if that’s all you have on hand.
- Dry White Wine: Cooking with white wine can add depth and complexity to a dish; however, feel free to swap in chicken broth if you’d rather omit it.
- Gluten-Free Orzo: I suggest using a corn and rice orzo, such as the one from @delallofoods. You can use regular orzo too if you’re not gluten-free.

How to Make Spinach Artichoke Chicken Bake
Preheat the oven to 400°F. Lightly brush or spray a 9×13-inch baking dish with avocado oil or olive oil.
Add all chicken, shallots, garlic, white wine, orzo, chicken broth, artichoke, spinach, tomatoes, thyme, salt, pepper, and lemon juice to the casserole dish. Mix until well combined.


Press into an even layer, making sure most of the orzo is submerged in liquid to ensure even cooking. Add the cream cheese on top.
Cover with a lid or foil and bake for 45 minutes.


Remove lid/foil, stir the cream cheese into the mixture, and continue baking for another 15 to 20 minutes, or until the orzo is tender and the top is golden and bubbling.
Remove from the oven and allow to cool before serving. Enjoy!

- 1 – 1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- ½ cup dry white wine (or extra broth)
- 1 (12-ounce) box gluten-free orzo (corn & rice orzo preferably, or regular orzo if not GF)
- 3 cups chicken broth
- 1 (14-ounce) can artichoke hearts, drained & quartered
- 3 cups baby spinach
- 1 pint cherry tomatoes, halved
- 1 teaspoons dried thyme
- 1 ½ teaspoons salt, plus more to taste
- ½ teaspoon black pepper
- 1 lemon, juiced
- 8 ounces dairy-free cream cheese
- Chopped parsley for garnish
Instructions
