Potato Chip Crusted Chicken Tenders - Olivia Adriance

When are you supposed to grow out of loving chicken tenders?! In my opinion, it’s a dish enjoyed by kids and adults alike!

My Crispy Baked Potato Chip-Crusted Chicken Tenders recipe is a grown-up version with a nostalgic twist thanks to the use of potato chips. 

This addition gets the tenders super crispy, so much that you’d be shocked to know that they are oven-baked instead of fried. 

And, if you’re egg-free, you’ll also be pleased to know that I use olive oil as the “glue” instead of eggs.

The result is a healthier and much tastier spin on the classic box of chicken tenders that you can pick up at a drive-through window. 

Serve these up for game day, a neighborhood gathering, or a kid’s birthday party. 

Oh, and don’t forget the dipping sauces! These pair particularly well with ketchup, buffalo sauce, and Korean BBQ sauce. Enjoy!

Ingredients for Potato Chip Crusted Chicken Tenders

Six ingredients (including salt, pepper, and olive oil!) are all you need for a plateful of fun, tasty chicken tenders!

  • Chicken Tenders: Most grocery stores already have chicken tenders packaged up for you. If you can’t find them, buy chicken breasts and cut them down to size. 
  • Gluten-Free Potato Chips: I used @sietefoods sea salt and vinegar chips. I love this brand because it uses minimal ingredients and healthier oils, like avocado oil. 
  • Almond Flour: This creates a coating for the olive oil and potato chips to stick to. If you don’t have almond flour, you can easily substitute it with cassava flour or any type of gluten-free flour blend.

  • Olive Oil: Instead of eggs, we’re dipping the chicken into olive oil for the chips to adhere to. 
  • Dipping Sauces: The possibilities are endless here! My personal favorites include @primalkitchenfoods ketchup, buffalo sauce, and Korean BBQ sauce. 

Step by Step Instructions for Potato Chip Chicken Tenders 

Preheat the oven to 400°F. 

Break the gluten-free potato chips up into small crumbs. This is easiest in a food processor, but you can also break them up in the bag. 

Set up your “breading” station by adding the almond flour, salt, and pepper to a low dish. Add the olive oil to a second dish and add the chip crumbs to a third dish. 

Dip the tenders in the flour first, then in the olive oil, then in the chips, and place on a greased sheet pan.

Spray the chicken tenders generously with olive oil and bake for 20 minutes until lightly crispy.

Remove from the oven and lightly spray with olive oil once cooked.

Broil for 2 to 3 minutes to get a nice crisp on the outside. Just be sure to watch closely because they can burn easily.

Once the tenders have finished broiling, allow them to cool slightly and serve with dipping sauces of your choice. ENJOY!

  • 1 ½ cups almond flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ cup olive oil
  • Dipping sauces for serving (I used Primal Kitchen ketchup, buffalo sauce, and Korean BBQ sauce)
