Cashew Chicken Lettuce Wraps

Anyone else get a craving for chicken lettuce wraps every now and again? It happens to me when I pass a PF Changs and think about their DELIGHTFUL chicken lettuce wraps. I had to make my own version because unfortunately theirs always leaves me needing a nap 😴😂 I’m obsessed with this healthy version! So much so that I always make a double batch because they are so good leftover once the flavors have really melded together. They are a great use for my homemade hoisin sauce as well.

Cashew Chicken Lettuce Wraps

The perfect healthy dinner weeknight dinner when you're craving something light but filling

Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 sweet onion, diced
  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 2 tsp sesame oil
  • 3 tbsp tamari
  • 2 tsp rice vinegar
  • 4 tbsp hoisin sauce
  • 1/2 cup cashew, roughly chopped plus more for garnish
  • 2 green onions, sliced plus more for garnish
  • sriracha to taste
  • 1 head butter lettuce

Instructions

  • Heat olive oil over medium high heat
  • Add onion and saute for 5-7 min
  • Add ginger and garlic and cook for 1 min
  • Add the ground chicken and saute until almost entirely cooked through (no pink)
  • While the chicken cooks, whisk the sesame oil, rice vinegar, tamari, hoisin sauce, and sriracha together and add to the pan
  • Simmer for 5 minutes
  • Reduce heat to medium low and add your water chestnuts, cashews, and green onions
  • Cook for an additional 3-5 minutes
  • Remove the chicken mixture the heat and serve in lettuce cups
