All you need to transform plain chicken into an exciting meal is a jar of salsa verde, a few spices, and a squeeze of lime!

You all know that I’m a huge fan of one-pot meals. There’s nothing better than having minimal cleanup after dinner! As a new mom, I’m a newfound lover of the slow cooker, and this Slow Cooker Salsa Verde Chicken Tacos recipe really hits the spot.
This no-fuss recipe is as easy as adding everything to the slow cooker and letting it work its magic for a few hours.
A jar of salsa verde keeps the ingredient list short and simple, while packing a sweet, balanced heat. It’s not overpowering but infuses the shredded chicken with plenty of flavor.


This chicken is delicious all on its own, served in a burrito bowl, or as tacos!

Ingredients for Slow Cooker Salsa Verde Chicken Tacos
A few pounds of chicken, a jar of salsa, and a few staple spices, and you’re halfway there to a quick and delicious meal. Here’s everything you’ll need for your next weeknight favorite taco recipe!

- Chicken: Either boneless, skinless chicken breasts or thighs work well for this slow cooker recipe.
- Salsa Verde: Packed with flavor, this salsa variety is typically a blend of tomatillos, spicy jalapeños, poblano chili peppers, and loads of spices. It has a sweet heat that adds a zing to the chicken when cooked low and slow. @latejulyorganic makes a great salsa verde, but the one from @traderjoes is also amazing.

Pin It- Spices: Cumin, garlic powder, onion powder, smoked paprika, salt, and pepper are my go-to spices for Mexican cooking and give the chicken that bold, savory flavor.
- Lime: Adding some fresh lime juice after the chicken has finished cooking really makes the flavors pop!
Serving Suggestions
My favorite additions to this recipe are avocado, pickled red onion, lime, cilantro, and dairy-free sour cream (@foragerproject makes a great one!). As for the tortilla itself, I love @sietefoods cassava tortillas!
How to Make Salsa Verde Crock Pot Chicken Tacos
Place the chicken in a slow cooker.
Add salsa verde, cumin, garlic powder, onion powder, paprika, and a pinch of salt and pepper.
Stir to coat the chicken evenly.


Cover and cook on low for 5 to 6 hours (or 3 hours on high), or until chicken is tender and shreds easily.
Shred the chicken with two forks and stir in the juice of 1/2 of a lime.
Uncover the slow cooker during the last 20 to 30 minutes on high to reduce liquid if needed.


Warm tortillas, then fill with salsa verde chicken. Add toppings of choice and enjoy!

This was so good and insanely easy! All 3 kids, even my selective 4 year old ate it (and had seconds). We Added Greek yogurt and cheese and everyone loved it.
