A box of pasta, a can of coconut milk, a pack of chicken, and a jar of sun-dried tomatoes will give you a perfect weeknight meal when you’re unsure what to make but are craving something warm and comforting. Here’s what you’ll need.

  • Gluten-free Pasta: @jovialfoods is always my go-to pasta! This one was from their Bionature line, but I also like their sourdough pasta if you aren’t gluten-free. Linguine, penne, or fusilli work well here. 
  • Chicken: Either boneless skinless chicken breasts or thighs work well here. Because you’ll cut them into bite-sized pieces, they’ll only take a few minutes to fully cook through.

  • Fresh Garlic and Garlic Powder: To really bring the garlic flavor! 
  • Sun-Dried Tomatoes: These sweet little gems have all the brightness of tomatoes intensified into one tangy bite. I like to buy a jar of olive oil, packed sun-dried tomatoes, and keep them on hand for quick and easy meals like this or my Mediterranean Chicken Meatballs.  
  • Tomato Paste: A squeeze of tomato paste adds richness to the sauce, really making the tomato flavor pop! 
  • Full-Fat Canned Coconut Milk: This creates a rich, dairy-free sauce that is velvety smooth and clings to every pasta noodle. 
  • Nutritional Yeast: Commonly used as a plant-based seasoning, nutritional yeast is a good swap for regular cheese. 
  • Balsamic Vinegar: A bit of acid helps round out the richness of the sauce. 
  • Garnishes: If you like some heat, feel free to sprinkle in a pinch of red pepper flakes. Adding some fresh herbs such as basil or parsley is a nice touch, too. 

How to Make Creamy Sun-Dried Tomato Pasta

To start, cook the pasta. Bring a medium pot of salted water to a boil.

Cook pasta according to package directions. Before draining, reserve 1/2 cup of pasta water (we’ll use this later!). Drain and set aside.

In the same large pan you’ll use for the sauce, heat olive oil over medium heat.

Add chicken, salt, pepper, and garlic powder. Cook for 6 to 8 minutes, until the chicken is golden and cooked through. Push to one side of the pan.

On the open side of the pan, add garlic, chopped sun-dried tomatoes, and tomato paste.

Cook for 1 to 2 minutes. Stir in coconut milk, nutritional yeast, balsamic vinegar, and red pepper flakes if using. Mix the sauce and chicken.

Let simmer for an additional 2 to 3 minutes.

Add cooked pasta and reserved pasta water. Stir to coat. Taste and adjust seasoning.

Top with fresh herbs and extra sun-dried tomatoes. Serve and enjoy!
