This simple chocolate chip protein bar recipe packs all the flavor and nutrition, without any unnecessary ingredients. Here’s what you’ll need:

  • Vanilla Protein Powder: There are literally hundreds of options out there, so choose your favorite. For this recipe, I used ritual essential protein daily shake powder in vanilla.
  • Coconut Flour: A few tablespoons of coconut flour will help improve the bar’s structure and help balance the moisture.

  • Maple Syrup: One of my most-used sweeteners of choice, maple syrup is smooth, caramel-like, and rich in flavor.
  • Nut or Seed Butter: Again, choose your favorite here. I suggest a creamy cashew butter (fixandfogg has a great one), but you could also use a classic peanut butter or almond butter. Tahini or sunflower seed butter are great nut-free options.
  • Coconut Oil: Choose refined coconut oil if you’re not a fan of coconut.
  • Vanilla Extract: A bit of extract to amp up the vanilla flavor.
  • Mini Dairy-Free Chocolate Chips: Any brand of chocolate chips works well, although I’m partial to the enjoyjustdate organic dark chocolate mini chips for this particular recipe.

In a medium bowl, whisk together almond flour, vanilla protein powder, coconut flour, and salt.

Next, stir in maple syrup, almond butter, coconut oil, and vanilla extract until a soft dough forms.

Fold in the dairy-free chocolate chips.

Press the dough into a parchment-lined loaf pan. Top with more chocolate chips — as many as your heart desires! Refrigerate for at least an hour until the dough firms up.

Slice into bars and store in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month. Enjoy!

What can I substitute for the coconut flour?

The recipe only calls for two tablespoons of coconut flour, so you can just use more almond flour. That said, the coconut flour helps absorb some moisture and will create a lighter, pillow-like protein bar.
