MAPLE BACON-WRAPPED CARROTS

Salty, crispy bacon is wrapped around sweet and tender carrots and finished with maple syrup and thyme glaze. This is one sure way to get the kids to eat their veggies!

Bacon Wrapped Carrots - Olivia Adriance

Once I made these, I knew they were instantly going to be one of my favorite Thanksgiving side dishes! 

These Maple Bacon-Wrapped Carrots are incredibly easy to make but are a phenomenal bite.

Roasted carrots are a staple side dish during the holidays. You know everyone — from the adults to the kiddos — is going to love them.

And while my Honey Glazed Carrots are always a worthy side, I wanted to see how I could spice things up a bit this year.  

If you add bacon to nearly anything, it’s always an instant hit. The salty, crispy bacon goes so well with the tender and sweet carrots.

The hint of maple syrup and thyme just brings the holiday flare you’re looking for. 

So no matter how many people you’re planning to feed, I guarantee they will all be gone before the night’s end. Enjoy! 

Ingredients for Maple Bacon-Wrapped Carrots

Nobody has time for a complicated side dish — especially during the holidays! These carrots only require five staple ingredients. Here’s what you’ll need.

  • Carrots: I like to look for relatively thin ones, about 1/2 inch thick. Plan for about 2 or 3 carrots per person. This recipe can easily be doubled or tripled, depending on how many hungry eaters you plan to serve!
  • Bacon: For this, I used thin-cut @applegate bacon. It’s organic, free of nitrates and nitrites, and contains no GMO ingredients. 
  • Maple Syrup: Bacon and maple syrup are really a match made in heaven. Glazing the bacon with the syrup gives it just the perfect amount of sweetness. 
  • Thyme: An earthy note thanks to a bit of fresh thyme. 
  • Flaky Sea Salt: @maldonsalt forever and always!

How to Make the Bacon-Wrapped Carrots

To start, preheat the oven to 400°F.

Next, line a sheet pan with parchment paper and place a wire rack on top. If you don’t have a wire rack that fits the baking sheet, skip this step. It just helps the bacon crisp up in the oven. 

Wrap each carrot with a slice of bacon starting at the top, ensuring that the bacon does not overlap. Place the bacon-wrapped carrots on the wire rack.

Roast the bacon-wrapped carrots in the oven for 30 minutes.

While the carrots roast, add the maple syrup and thyme leaves to a small bowl and stir to combine.

Remove the carrots from the oven and baste them with the maple and thyme mixture using a pastry brush.

Return the carrots to the oven and continue to roast for another 15 to 20 minutes, or until the bacon is crisped to your liking.

For an extra crispy exterior, I like to turn the oven to broil for the final 2 minutes, watching carefully to ensure the bacon doesn’t burn.

Remove the carrots from the oven and let them cool.

Add flaky sea salt, if needed. You may not need any depending on how salty the bacon is… Enjoy!

Ingredients 

  • 12 carrots (look for relatively thin ones, about 1/2 inch thick), peeled
  • 12 slices thin-cut bacon
  • ¼ cup maple syrup
  • 1 tablespoon fresh thyme leaves, roughly chopped
  • Flaky sea salt, to season

Instructions 

  • Preheat the oven to 400°F.
  • Line a sheet pan with parchment paper and place a wire rack on top (skip if you don’t have a wire rack that fits on your baking sheet—this just helps the bacon crisp up).
  • Wrap each carrot with a slice of bacon starting at the top, ensuring that the bacon is not overlapping. Place the bacon-wrapped carrots on the wire rack.
  • Roast the bacon-wrapped carrots in the oven for 30 minutes. While the carrots roast, add the maple syrup and thyme leaves to a small bowl and stir to combine.
  • Remove the carrots from the oven and baste them with the maple and thyme mixture.
  • Return the carrots to the oven and continue to roast for another 15 to 20 minutes, or until the bacon is crisped to your liking. For an extra crispy exterior, I like to turn the oven to broil for the final 2 minutes, watching carefully to ensure the bacon doesn’t burn.
  • Remove the carrots from the oven and let them cool. Since bacon is on the saltier side, you likely will not need to salt the carrots but taste for seasoning and add some flaky sea salt as needed. ENJOY!

Notes

I recommend planning for 2 to 3 carrots per person, so make 2x to 3x if serving a large crowd.
