Ingredients:
1 can chickpeas, drained and rinsed
1/2 cup cherry tomatoes, sliced in half
1/2 cup cucumber, thinly sliced and quartered
1/4 cup red bell pepper, diced
1/4 cup red onion, diced
1/4 cup kalamata olives, sliced lengthwise
1/4 cup peperoncini’s
1/4 cup parsley, roughly chopped

Dressing:
1/4 cup olive oil
2 tbsp balsamic
2 tsp dijon
1 tsp honey
a few grinds of pepper
a pinch of salt
a few shakes of oregano
