SUPER SIMPLE SHRIMP TOSTADAS

This handheld Mexican meal is layered with lots of textures and flavors — creamy refried beans, fresh guacamole, and perfectly tender shrimp piled on top of a crispy, crunchy corn tortilla. It’s perfection in one bite!

Tostadas are one of those dishes that look fancy but are actually quite simple to make. Think of them as an open-faced taco — which gives you plenty of surface area to add as many toppings as you’d like!
These Super Simple Shrimp Tostadas fit the bill as a delightful appetizer for a get-together or a light main meal or lunch.
These shrimp tostadas pack a ton of flavor into each mouthful.
The shrimp is seasoned with store-bought taco seasoning and layered with refried beans, guacamole, and must-have accompaniments like chopped cilantro, lime juice, and a drizzle of your sauce of choice (my go-to is @sietefoods creamy jalapeño botana sauce).


If you have a pack of corn tortillas, I recommend making your own tostadas from scratch. It takes less than 10 minutes for them to bake, and you’ll have a perfectly warmed, crunchy base for your shrimp and toppings.

Ingredients for Shrimp Tostadas
One look at the ingredient list and you’ll see why I called it “super simple”! I rely on store-bought seasoning, beans, and guacamole to make this an easy meal to whip up any day of the week.

- Shrimp: I always look for frozen, wild-caught shrimp whenever possible. Go ahead and buy peeled and deveined shrimp to make your life a bit simpler!
- Taco Seasoning: I used @sietefoods mild taco seasoning to season the shrimp.
- Refried Beans: You can definitely make your own, or rely on a store-bought brand. Just be sure to check the ingredients as many refried beans are filled with fillers and unnecessary seed oils. I love @sietefoods vegan refried pinto beans.

- Corn Tostadas: I prefer to make my own tostadas (see Notes below), but some grocery stores also carry them.
- Toppings: For me, it’s not a taco night without fresh cilantro, lime juice, and a fun sauce like @sietefoods creamy jalapeño botana sauce to drizzle on top of everything.
How to Make Shrimp Tostadas
First, season the shrimp by tossing them with 1 tablespoon of avocado oil and the taco seasoning.
Heat a pan over medium heat and add another drizzle of avocado oil.
Add the shrimp to the pan in a single layer and cook for 2 minutes on each side. You know they’re done when they are pink in color.


Remove the shrimp from the heat and let cool before slicing them into bite-sized pieces. Season with salt, if needed.
Heat the refried beans in a pan over low heat. Season with salt, if needed.
If making your own tostadas, brush 12 corn tortillas with avocado oil on both sides.


Place them on a parchment-lined baking sheet and bake in a 400°F oven for 5 minutes on each side.
To assemble the tostadas, add a layer of beans, a layer of guacamole, and the shrimp.
Top with cilantro, a squeeze of lime, and your favorite taco sauce. Serve and enjoy!

Ingredients
- 1 pound shrimp, peeled and deveined

- 12 corn tostadas (see Notes below to make your own)
- 1 can refried beans (I used Siete Foods vegan refried pinto beans)
- Guacamole (homemade or store-bought. See Notes for my guac recipe)
- Salt to season
- Chopped cilantro, for serving
- Lime wedges, for serving
- Sauce of choice (I used Siete Foods Creamy Jalapeño Botana Sauce)
