The tender gnocchi cooks right in the sauce, soaking up all the savory flavors from the canned tomatoes, chicken broth, Italian herbs, onion, and garlic.

  • Italian Sausage: Use either chicken or pork, and buy it in links and remove the casing, or buy it ground to save yourself the extra step.
  • Onion and Garlic: Two essential ingredients for any Italian meal. 
  • Tomato Paste: This helps intensify the tomato flavor and thickens the sauce.

  • Seasonings: Italian seasoning provides an earthy, complex taste that is reminiscent of a tomato sauce that’s been on the stove for hours! To kick it up a bit, you can add in some red pepper flakes as well.
  • Coconut Milk: A can of full-fat coconut milk keeps this recipe 100% dairy-free, but adds all the creaminess that you’d expect from a cozy, indulgent dish like this.

There are several brands available, including @cappellos, @delallofoods, and some grocery store brands, too. Many gnocchi contain eggs, so be sure to check the ingredient list if that’s a concern to you. 
  • Greens: A great way to sneak in some extra nutrients is to add big handfuls of either spinach or kale right at the end of a pasta dish.
  • Fresh Herbs: A sprinkle of chopped fresh basil or parsley livens everything up before plating it up for your hungry crew. 

How to Make One-Pot Sausage and Gnocchi  

To begin, heat the olive oil in a large skillet or braiser over medium heat. Add the sausage and cook, breaking it into chunks, until browned (about 7 to 8 minutes).

Then, stir in the onion and garlic and cook for 3 to 4 minutes, until softened. Add tomato paste, Italian seasoning, and red pepper flakes. Cook for 1 to 2 minutes to deepen the flavor.

Next, pour in coconut milk, chicken broth, and fire-roasted tomatoes. Stir to combine and bring to a gentle simmer.

Add the gnocchi and cook uncovered for 3 to 4 minutes, until just tender.

Stir in spinach or kale and cook for 2 to 3 minutes, or until wilted.

Season to taste with salt and pepper. Serve warm, topped with fresh herbs like basil or parsley if desired. Enjoy!

  • 1 cup full-fat coconut milk (or cashew cream)
  • 1 cup chicken broth
  • (1) 15-ounce can fire-roasted diced tomatoes
  • 1 pound gluten-free gnocchi
  • 2 cups baby spinach or kale
  • ½ teaspoon salt, or more to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh basil or parsley (optional for garnishing)
